Why so much shrinkage
Brisket loses ~50% to rendered fat and moisture during long cooks. Pork shoulder a bit less (60% yield). Lean cuts like steak hold onto more of their weight (90%).
Serving sizes
Pulled pork sandwiches: 5-6 oz. Sliced brisket: 6-8 oz. Ribs: 3-4 ribs/person. Sides reduce meat needs by 10-20%. Beer drinkers eat less; teens eat more.
Round up
