When scaling doesnโt work linearly
Baking is more sensitive โ yeast amounts, leavening, and surface-to-volume ratios donโt scale 1:1. For very large or small adjustments, baking benefits from rounding to the next sensible measure rather than exact math.
Cooking times
Cooking time doesnโt scale with quantity for most things. A doubled stew takes only slightly longer to come to a boil but the same simmer time. Roasts: per-pound time roughly applies, but check internal temperature.
Salt and seasoning
Salt scales linearly but taste threshold doesnโt. When doubling spices and aromatics, start with 1.5ร and adjust to taste. Better to under-season then add more than over-season permanently.
